Meat roll stuffed with truffles and asparagi

MEAT ROLL STUFFED WITH TRUFFLES AND ASPARAGI

For 4 persons.

- 500g of mixed minced meat (beef, pork)

- Salsa tartufata 170g

- Boiled asparagi 100g

- 70g of Istrian prosciutto

- 2 eggs

- 150g of sopped and drained bread (sopped in milk)

- Parmesan cheese

- Garlic

- Parsley

- Onion

- Salt

- Vegeta spice mix

- Olive oil

PREPARATION

Prepare the mixture from minced meat, eggs, bread, Parmesan, garlic, parsley, salt and vegeta and stir well to tie together the ingredients.

Braise some onions on olive oil; when they turn yellowy, add some finely chopped prosciutto, Braise the prosciutto, stirring it for about one minute, and then add salsa tartufata and boiled asparagi; braise everything together for another couple of minutes.

Roll out the minced meat mixture finger and a half thick on aluminium foil, then smear the truffle mixture on it and roll everything together. Put the roll into a baking dish and coat it with olive oil. Put into the oven and bake for 45-60 minutes at 200°C, occasionally pouring under it.

TIP: You can bake potatoes chopped into cubes and seasoned with the Vegeta spice mix alongside the roll.
